Please add your advices to this thread. It is by no means comprehensive and is based on personal experiences only.
The strategy for a Shaolin defeating a Lotus Order is based on the general principle for most Shaolin engagements. You must be the unbreakable wall.
Lotus Order has: short-term invisibility, fear, heals, range, and damage enhancing debuff.
Remember that no matter what the Lotus Order player does, you must not panic. Shaolin has highest HP of all classes and this particular chickadee will not burst you to death in under 11 seconds.
Step 1: They will curse you, fear you, and they will panic if you hit them at all. The first thing needed to do is to show off how much more HP you actually have by smacking them with attack skill. Keep rage to dispel blindness, but any attack should immediately put you ahead in the hp race.
Step 2: The next step is to trap them. Slowing them and immobilizing them will allow you to keep them close at hand for melee combat. You would be wise to save these skills for AFTER they blow the runner cooldowns (invis and fear).
Step 3: Monumental hp and effective cooldown for cooldown matching should make it apparent that if they want to win, its not going to be standing next to you and your physical attack. When they run, remember that you have slow, immobilize and Wind Walk.
Step 4: When they are at the point where YOU would worry that they are going to try to vaporize, lotus finger to prevent a last second fear or really lucky heal. Remember that you don't need alot of MP to beat a lotus, Shaolin isn't known for using attack skills anyhow. Just use them to maintain control of the situation and then burst them at the end when they are near helpless.
If things get sticky, remember that your HP is supposed to be sucking up their MP and because they are not Taoist or Pyro (or Minstrel), plugging away is the way to go.
As always, in PVP you have to think about what you would do in the other player's situation. A Lotus soloing a melee boss knows that the best thing to do is to kite, curse, and damage from far away. Shaolin's are basically bosses given the amount of HP we have. Lotus does not win against melee most of the time if they cannot kite the melee. Keep this in mind and don't get kited.
